Correct me if I'm wrong, but I don't think you can change pesos back into Canadian dollars once you come back. You can get by with one or the other, but I would say take mostly American and have some pesos.

Royal Bank has done it for me, but not coins, only paper.
But we try to use it up before we come home as it is a pain to change back to Canadian.
