Part of my job is critiquing and coaching people on creating professional resume's. Feel free to PM me and I can pass on some info.

I agree with taking "References Available Upon Request" off your resume as it is implied that you need at least 3 references before applying for a job. However, you shouldn't include these on your resume but have them with you when/if you go for an interview.

I've seen references on absolutely terrible resumes and I looked at those names and thought "Why would you give this idiot a reference?"

That's another point that should probably be made. If you agree to be a reference for someone, you are legally required to give them a good reference. Think carefully before you agree to be someone's reference.

Woah now.. You can simply say: "They worked for me." You don't have to say they were good. But you can't say they were bad.

Fair enough. I should have phrased that better. However, most good employers will ask more questions than just "Did they work for you?"

You can't pull a "Sure I'll give you a reference" and then slag the guy/gal if you get a call.

Unless you are an executive, a 1 page resume is all that is required. And a cover letter is a must.

How does one go about highlighting relevant education that hasn't quite culminated with a degree yet? This is a very tricky issue for me.

You can put in what you have completed.

ie:
School of Hard Knocks - 2005-Present
Program Here
GPA
Accomplishments Here

Put the name of the school, the program and the time you've spent there. If it seems long enough maybe they'll just assume the last date on there is when you got that degree. I probably would.

Like this:

The University of Rainbows
Unicorn History Studies
2001-2006

If I see that I might think the applicant got a B.Sc in unicorn history in 2006. I'm sure you don't want to be dishonest, but tacking on "incomplete" or "did not graduate" won't really sell.

Maybe the words "in progress" somewhere if mild/innocent deception isn't your bag.
