Sucks that they appear to have moved the Grey Cup up a few hours. It used to start at 6:00pm MST, but this year it looks like it's at 6:00pm EST. With the Cards game starting at 2:00pm MST, you'll have to find a Canadian friendly Sports Bar close to the Stadium, and you'll still only see the end of the game.
EDIT: ...And another thing...Shame on you for booking a trip to the States for Grey Cup Sunday.
I almost made the same mistake in 2005. At halftime of the Western Final (when the Stamps were destroying the Esks), I was starting to scramble to find out where I'd be able to watch the game in Anaheim. Then, Maas went in and the Stamps collapsed, so it wasn't an issue. I did find out that ESPN Zone at Disneyland showed the Grey Cup on one of their many tv's. That won't help you in Phoenix, but if they have any giant sports bars near the Stadium, that would probably be your best bet.
It doesn't look like any of the Coyotes are from Saskatchewan, or I'd suggest going to crash their party.
