Heh, just looked at the picture of the one we got at Costco last year. Never even noticed the "Cook to a minimum of 145". Ooops. We pulled it at Medium Rare (135)

Ya,m Costco mechanical tenderizes their meat with needles, so they need to put that warning on, I think. Surface bacteria gets pushed inside.

- Skating outdoors
- Driving around to look at Christmas lights
- Volunteer to sort food or toys for one of the local charities
- Make Christmas cookies or other favourite treats

Skating on outdoor pond. Sledding. Chop down. Christmas tree and decorate it by the fire. Then some board games and other games.

Maybe some fishing…

There is more to it. I suspect you were fine

I have the Food Lab book by Kenji Lopez Alt. He has a section on recommended cook times and bacterial reduction. Highly recommended book on many fronts

I recall that there is a section where it notes that the FDA recommends cooking chicken to 165 at which point bacteria is killed instantly. However I think about 5 minutes at 150 (check it to verify) gives the same level of safety without drying out the chicken

We made an attempt at our annual drive to go see Christmas lights tonight with varying levels of success. We tried to get out early to not mess up bedtime too much, so we got an amazing sunset in Longview, but were a touch early for the full affect of their Christmas lights. George Lane park in High River was fantastic and we planned to hit up Spruce Meadows, but the line up to get in was pretty much back to Stoney, so that was a big hell no. We do the Spruce Meadow lights every year and this is the first time I’ve ever seen it that busy! It was about 6 o’clock, so I wouldn’t think that prime viewing time? But yah, complete gong show.
