I took care of my fruitcake a couple weeks ago, this fantastic bourbon-soaked, pistachio laden, marachino-cherry-free version. It's a great fruitcake for people who don't like fruitcake, which includes myself. This weekend I'll be doing swedish-style cinnamon buns.

Impossible pie. It's very versatile and simple to make. It's called the impossible pie because it's apparently simple, it should be nearly impossible to mess it up.
What's also interesting about impossible pie is that you can start with the basics of an impossible pie and experiment in other manners to your own liking. So unlike Macaroons, you have more option of experimenting more with flavors. There's probably tons of ideas online on the base pie + variations that certain bloggers have tried (ie: Adding fruit, nuts, chocolate, alcohol etc. into the pie or pairing flavors like lemon or lime flavors via ice cream/flavored creams, beverages like egg nog, coffee/tea etc.).
I also wonder if you could do a neutral recipe such as a scone recipe and just sprinkle some coconut variations and end up with something good? (ie: Coconut straight up, coconut + chocolate, citrus zest + coconut, coconut cran or whatever etc.). I've done this with a variety of spices and ingredients, but I've never considered coconut in scones until now. I have some, so I think I might give this a try myself.
