Caribbean Drops. I just made them today as the Baroness told me I'm doing the baking this year. Fair enough, but she had to supervise as there are many tips the recipe doesn't include. She told me to keep it simple and stick to the drop and bake cookies.

I made Hermits last night. They have dates and pecans but you could sub/add coconut to the recipe.

Maybe to pivot from the original intent and reorient things towards something more interesting, I'll share that with my abundance of icing sugar and, I guess, continued abysmal luck finding regular sugar, I'm going to try making this cool-looking Norwegian dessert this weekend
Don't know how close you are, but Dalhousie and Thorncliff Safeway have both had bags upon bags of sugar this week, all types from what I could tell

I make German Stollen every year as well as Italian Panettone

I basically follow the recipes of Bruno Albouze. I change the recipes a bit, but not much. This man knows how to bake, especially bread. The dough that he makes for these two breads is phenomenal. I already have my fruits and nuts marinating in Kirsch and another cherry brandy and will keep marinating for another week.

If you want my recipe with changes, pm me, not sure if I can post stuff from his site as some of it you have to pay and subscribe to.

I have nothing to personally add to the baking recipe thing, but I had to chuckle to myself about the sugar shortage because this was in my brain...

Somehow I ended up buying coconut twice and now have a ridiculous quantity, so I guess a lot of macaroons are on the docket. (Worth mentioning in these times of shortage, you can make them without sugar, just sweetened condensed milk.)

Anyone got any other coconut-heavy christmas baking recipes they'd recommend?

I took care of my fruitcake a couple weeks ago, this fantastic bourbon-soaked, pistachio laden, marachino-cherry-free version. It's a great fruitcake for people who don't like fruitcake, which includes myself. This weekend I'll be doing swedish-style cinnamon buns.
Impossible pie. It's very versatile and simple to make. It's called the impossible pie because it's apparently simple, it should be nearly impossible to mess it up.

What's also interesting about impossible pie is that you can start with the basics of an impossible pie and experiment in other manners to your own liking. So unlike Macaroons, you have more option of experimenting more with flavors. There's probably tons of ideas online on the base pie + variations that certain bloggers have tried (ie: Adding fruit, nuts, chocolate, alcohol etc. into the pie or pairing flavors like lemon or lime flavors via ice cream/flavored creams, beverages like egg nog, coffee/tea etc.).

I also wonder if you could do a neutral recipe such as a scone recipe and just sprinkle some coconut variations and end up with something good? (ie: Coconut straight up, coconut + chocolate, citrus zest + coconut, coconut cran or whatever etc.). I've done this with a variety of spices and ingredients, but I've never considered coconut in scones until now. I have some, so I think I might give this a try myself.

Coconut should be banned from holiday baking. Disgusting stuff.
