A friend of mine has an Argentine Dogo that behaves more like a lab. It is way more friendly and submissive than most Dogos. The breeder he got it from wants him to consider breeding it for that reason in fact because there is a movement to try and breed out some of the aggression the breed is often associated with.

Some but not much. Dog breeds get their reputation for a reason. Just like Goldens are great family dogs there is the odd one that doesn't get the genetic memo.
Shibas I have seen are like mentioned before, ignorant dogs with terrible recall. You might get the one that missed the genetic memo but that chances are pretty slim.
