Company A where I currently am recently signed an agreement to do a project for 2 months starting Feb where I would be "the" guy and I'm just wondering what I should do if I get an offer from one of B or C.

I was thinking about potentially asking one of B or C if I get an offer if I can push the start date a month or something, but not sure how that would look.
Are you a contractor at A co.? Because employees don't need to sign agreements to work on projects. Personally, I won't worry too much about project at A co. Do the best while you are there if you can push the start at B or C co a month, that's the best. Just tell them you have booked a trip in February and shoot for a March 1 start.

But if you have to start at B or C co in February, I would just leave project at A co as gracefully as possible.

I think he meant the company signed an agreement to do a project.

But I don't have a comment on the situation specifically.

In my career, I have seen C suit, VPs and execs leaving the company in the middle of projects worth hundreds of millions that they started. It's your career and you have to do what's best for yourself.

If the two companies you have been interviewing with are very interested in you, it might be possible to finish the two month project at your current company and then start with B or C.

I'd be honest with the at the offer stage, say that you greatly appreciate their offer and are looking forward to working with them, but would like to start at the end of March so you can fulfill your obligation to your current employer.

If a candidate that I was very interested in came to me and said this, and it wasn't for an immediate need position, I'd have no problem with it. It would show that you're not going to just cut and run in the middle of work when something better comes up.

I had a situation like that over summer. I'm not sure it's best for you or your current company. The problem there is you slowly start to lose motivation and even if you can fight that other people around you start to be less willing to do things your way as you are gone soon. You start to feel like an outsider which is awkward. So I would never again give more than 4 weeks I did 5 to get through my coworker vacations and worked real hard doing it but it was definitely hard to do and very stressful.

So unless it's a stand alone project that you can basically do yourself I would not be giving two months notice.

Accept both jobs, start one for a week, maybe two, then go on 'holidays' and try the second one out. Then decide. Works well with dating too.

Job wise it's something I'd want to move into, but I don't want to burn any bridges by leaving right when a project I'm supposed to be leading is coming up, but it came so last second so there's no way I could have planned for this.

I was thinking about potentially asking one of B or C if I get an offer if I can push the start date a month or something, but not sure how that would look.

Any thoughts or ideas?
I've never really understood this. Obviously you want to part ways as amicably as possible, but when push comes to shove, you have to do what you feel is better for yourself. You don't owe your current company anything outside of any contractual obligations. If you don't see yourself working for Company A, and especially if you don't see yourself working in that industry overall, who really cares?
