If you put the displays side by side, it is a massive difference. My dog won't even react if I put dog videos on my iPad1, she tries to jump into the screen and goes berzerk on the retina.
I got mine at Target, it was $20 cheaper than the Apple store, plus you get 5% off with the target red card plus the were giving away $30 gift cards. SO it saved me about $70.
I don't know if it is still the same, as I bought mine launch week.

Isn't this maddening? I come home and my wife has the TV tuned into SD, looks like crap, I immediately change it to the HD station. "I can't see the difference." WTF???!?

Just wanted to weigh in on the 16 versus 32 thing.
The longer you plan on keeping something like an iPad, the more memory you will likely need.
So, if buying the air, get the 32. more expensive but less frustration in later years. If you think it will get upgraded in 1-2 years, or aren't sure if she will use it, go with 16 on the iPad 2 and upgrade if necessary later.
Just my personal rules on tech; ymmv.

Yet my livingroom has 14 little pieces of cardboard with paint on them that all look like the same cup of coffee with too much milk.........

and the actual colour may be slightly different from the card when on the wall due to a number of factors. Theoretically, it could look like another very similar strip when up, dried, with sunlight.
I told the wife light, medium or dark brown; from there the shades don't matter to me. it seems to make her happy so I find myself agreeing!

Have you considered the ipad mini with retina? The specs are exactly the same as the air. The screen (and overall unit) are just smaller, but many prefer the size. Easier to handle.

Honestly, unless you think she will be doing a ton of typing or other types of content creation, the mini is a better size for lots of things that people do on tablets.
Video at a comfortable arm's position is about right, reading with one hand is easier, plus it will likely fit inside her purse etc.

But doesn't apple release a brand-new, game-changing, technologically superior, top-of-the-line, new iWhatever every two weeks? Just get the cheapest one you can find, and in two weeks, get the newest, cheapest one... repeat until the end of time...
Plus, the next one will no doubt be available in... wait for it... colours!!!

And I can't stand the size of the mini.... especially if you use it for magazine subscriptions.
If I was going for a mini sized tablet, I would get a Nexus 7.

Definitely go for the Air or the latest mini and at least 32GB. Not that you may need the speed or memory yet but it is future proofing. My iPad 2 still works fine with iOS7 but is just a hair laggy. I expect iOS8 will be the limit
