Do what I always do in these types of situations, get the name of her supervisor and email/call them, if by some odd chance that doesn't work, get the supervisor boss's name and contact them. I would bet if you do that the adjuster is calling you back within hours.
Or, follow Vlad's advice and get yourself a lawyer (even Vlad himself), though if it is a minor injury it probably wouldn't be worth your time to do so, IMO.
