I know how to make sushi. I usually make unagi and california rolls because I can find decent tasting salmon sashimi anywhere. Where do these resturaunts get this awesome salmon sashimi from?
Is it possible for a regular guy to go buy it somewhere? I know I won't get it as cheap as the big chains do because I'm not buying in bulk.
I'd perfer no seafood out of the oceans and just river stuff aswell. Is the salmon you eat in sushi restaurant out of the oceans? I hope not I heard anything from the ocean nowadays is toxic.

You don't want to eat anything raw from the river or freshwater sources. There is a much higher concentration of parasites in freshwater fish that can make you really sick or even kill. Good rule of thumb is to cook anything from freshwater, and stick with high quality frozen cuts of ocean fish for sushi.
There are places in asia where they cut up fish fresh from tanks (saltwater) without being frozen - I love these places but the thought of getting sick is always at the back of mind.
