I did the helicopter ride over the Grand Canyon, it was great. It certainly is worth doing. I don't think I would do it as a romance thing though. It is not romantic at all, very loud, other people with you crammed into a tight little helicopter.

Head over to the airport and jump on a plane to Vancouver. Swing through Yaletown and pick up the G man. We will hoist a few flagons of ale maybe punch out a few canuck fans along the way and just generally rip up the place. Head back to airport.

You could be back in time to still take your girl out for a nice dinner.

As for restaurants - while I've never been there, I will make sure to visit Rick Moonen's RM Seafood when in Vegas.

Get as many little cards as you can get from the Mexicans on the street, spread them all over your bed, and say, "because it's Valentine's Day, you choose, my love"...
Otherwise, hit the Improv at Tropicana (I believe) - never fails to entertain.

yeah I would third this

while I agree with the other poster below that its not exactly private or conventionally 'romantic' my wife and I did this trip last year and would rate it highly, and although it was pricey we don't regret a penny we spent. having a champagne picnic in the Canyon can certainly be considered a good Valentine's move!

we filled a shopping bag with these when I was down there and spread them all over the room before we checked out. thousands of them, cleaners probably hated us, but im sure they are also the ones who gave them to us.

You're already taking her to Vegas. She owes you now - have her roleplay a high-priced call girl willing to do anything. Make sure she is wearing the right boots, authenticity is important.

Sushi at Yellowtail in the Bellagio on the patio overlooking the fountains. Order the Omakase (chef's tasting) and ask the manager for VIP access to the Bank nightclub.
