I've made my own, usually it's best with leftover steak that has been grilled to rare or med-rare(and obviously seasoned properly). Fry up peppers and onions. When ready, add the meat(and extra oil if needed). Usually a sirloin or NY strip sliced across the grain. This may not be traditional, but I like to add a bit of BBQ sauce, sometimes something spicy to the pan after the steak is flipped. You only need to warm up the steak flip the strips, don't overcook it, and it should be tender.
A good option for meat for a cheesesteak or any type of beef on a bun is H-Mart because they sell thinly sliced beef from a bunch of different cuts. It is not necessarily cheap there but it definitely cooks up quickly and easily for a sandwich.

Someone in one of the food threads previously mentioned Around the Bend, off Blackfoot and said it was great... They have a Philly Beef Dip on the menu with steak, peppers and cheese... I haven't been, but the reviews seem good, so it might be worth a shot.

Yeah, that may be the answer right there. Beef and cheese is extremely expensive in Canada. So when two of the four key ingredients are stupid expensive and one's hard to even get (real provolone), that might be the barrier rather than just no one feeling like trying to make one.
I mean steak night is a stupid expensive dinner if you're going out these days, and is generally done in nice restaurants. So maybe having to price a quality PC at $25+ in Canada but not have the nice restaurant experience makes it a non starter?

Basically it would be the same ambience/storefront/crowd as any of the latest burger/chicken places as per the trend, except your main offering would likely have to cost $10 more than theirs, minimum to make it work because of the steak and cheese costs.

T&T used to carry them, I don't know if they still do. They were the ones from the main supplier in town.

They are different. E Mart is local, H Mart is a giant grocery store chain from the USA.

H Mart has both fresh and frozen sliced options. They also have different thickness options like shaved, thin and fast fry.
If you want good quality meet, Masters Meats also sells meet for rouladen, which is pretty thin. Not, like, super shaved thin but would probably work well for a Philly.
I've also bought those huge top round roasts from Costco, cut into slice-able sizes, then frozen. Pass them over the mandoline and you can get really thin cuts for cheap.
Any good Nandos style places? (Not breaded). Can’t stand deep fried batter on chicken.
This is from a few pages back, but Galitos just opened up in Redstone waaay up in the NE. It's an overseas franchise that I think does the Nandos thing far better than Nandos. I used to go there quite a bit when I lived in Abu Dhabi and was thrilled when I saw they opened up here. They started out in Forest Lawn but relocated.
