Any recommendations on a good, COMFORTABLE, saddle? I want some more cush back there, but I would prefer not to have a huge cruiser seat.
Something of an average/smaller size with decent foam/gel?

the most personal part of the bike. what is comfortable for me you may hate.
some manufactures (bontranger) have a guide you sit on and it measures your sit bones and recommends a saddle size accordingly.

No 1x11 experience here but I'd go 1x10 for a few reasons:
-Cheap. You can get a top end awesome shifting derailleur for a 10spd cassette for less than the 11 spd. Or go the other way and get a cheap 10spd derailleur and just replace it every year or two and still be ahead.
-Abundant. It's so easy to find parts to make it happen/fix it/tweak it
-Just get a smaller chain ring for climbing. Given it's a winter bike, sacrificing some top speed may be an ok compromise.

I did again, was my 5th year. There was only 1400 riders, which a few hundred less than normal.
Only got rained on for about 10 minutes on Saturday, and Saturday night saw about half the campers move into the arena to avoid the rain, was actually pretty cool seeing everyone just grab their stuff and pick a spot on the floor.
Sunday was good, foggy to start between Okotoks and Black Diamond, but no rain and got warmer as the day went on.
Turned out to be a pretty good ride!

Yes, I still have both. It's pretty much what hulk said above.
The weight of an XT 11sp 42T cassette is roughly 450g. For just a touch more, you can get XTR 10sp at 250g, or XT 10sp costing well less (3XXg??). That's a chunk of rotational mass. You don't need 42T for the city at all. These days, now that I have my legs back, I'm running oval32T:16T SS. There are only a few spots where I struggle, but this setup is as maintenance-free as it gets. 10sp parts are cheap now and will be dirty dirt cheap in a couple months.
XC will be a different story, requiring either a smaller chainring or the 42T. What kind of rides are we talking about? 20km/200m or 20km/600m?

Go to a good shop and try a few different ones. Everyone's tastes are different. Specialized body geometry works for me on the road bike, I think I have a WTB on my cross and mtn bikes.

I was a little leery of them but the braking is considerably better than my old rim brakes. so far so good.

As of 2016, age-group triathlons will become draft legal. You don't want a guy with discs in front of you hitting the brakes - you'll go right into him. They are also talking about banning aero-bars, which seems ######ed.
Changing a flat at the side of the road is a bit faster on a rim-brake though.

Picked up a new, well sorta new bike today it cost me $20.00. Circa 1979. A retro rebuild project.
It's even got Turkey Leg centre brake levers. I'm 17 again

No disc brakes on this bad boy.

^ cool, I can remember saving up my paper route money to buy a seine for about $200. At the time it seemed like a top end bike.
Nice score. Love the shifters on the handle bar stem/quill and the plastic brake cozies.
