I'll admit I thought he was a bad choice when they first announced him as Captain America. Fantastic Four was still too fresh in my mind. And while I don't hate those movies like a lot of people do, I couldn't get past his smarmy character.
He's Captain America for me now. On the screen he obviously looks the part. Winter Soldier and Civil War are two of the best Marvel movies (top 5 MCU with Infinity War, GOTG and Iron Man IMO). Off the screen he seems like a good guy as well. It's hard to hate a guy who will visit children's hospitals in full costume.
I hope they pass the torch to Bucky or Falcon like the comics, rather than trying to recast. It'll give us a few more years before we have to see someone else as Captain America.

I can’t get into Aquaman. Looks like maybe it could be fun for fans of the character, but the direction they went with him as this dudebro dunce is not something I’m really interested in.
Anyone seen Venom? One of my favourite characters but I’m scared they wrecked it.
I actually liked it, Tom Hardy did a great job and it was pretty funny. Had a pretty good Friday as well at the box office, made around $32 million yesterday.

They...don't do well with it. The movie felt to me kind of like Suicide Squad. I didn't regret watching it, but there was so much potential there.
Venom is...odd...without Spider-man as his reason. The stuff he does makes no sense if he hasn't been Spider-man's suit first, which here, he hasn't been. The final CGI fight was brutal, and made even worse by the 3D of the theatre. It felt like the movie spent too long setting things up and not enough actually DOING them. Then when it did do something, it was over in seconds. Also, the movie isn't even internally consistent with it's own world, pretty much ignoring everything it takes forever to establish in the first half for the sake of 'This should be a cool story!' (It's not) in the second.
I did, however, like the interactions between the Symbiote and Brock.

I think I'm on record on this site somewhere chastising the casting of Evans. I thought it was one of the worst casting decisions ever.
Boy have I done a 180. He owns that role. My favorite character in the MCU. I think the time has come for him to move on. It makes sense for Stark and Cap to exit. Their respective arcs seem to be complete. Whereas Thor seemingly has more of an arc to play out (Re-establish Asgard).
Bucky would be a good choice to take over. If Evans was up for it, it would be awesome if he would take a background role. Cameo every once in awhile. Kind of like Fury.

Theres two major issues with this which goes to your question of 'if Evans was up for it' and they're very real-world issues.
Primarily I understand that working for Disney is a bitch. Their standards and requirements are pretty gruelling among them being that while you are under contract with them they basically own your soul. You are always 'on' and have to abide by their rules at all times.
And secondly that bastard Evans is naturally a slimmer individual, maintaining that shape he needs for Captain America is really difficult for him, similar to Hemsworth, he has to force-feed himself on a diet that I dont think anyone would particularly enjoy and then work out constantly.
The point being, doing that for 8 years as a title character is one thing, but its a big ask for a bit-part and hes probably done with it.
Which is a shame because I really feel that hes killed the role of Captain America, hes really owned it.

If you thought this season would have a happy ending, you haven't been paying attention.
I thought it was well known Evans was on his way out after AV4. Not surprised.
I think RDJ's contract is up too but I think he's going to keep playing Stark on a film to film basis. There's still some solid Iron Man Material to eat through.
Who else is supposed to be leaving? Ruffalo and Hemsworth sooner than later. But I cant see either leaving if they can poop out another Waititi film before they go.
Doctor Stange is staying for a while. Same with Black Panther. And eventually they're going to do a Black Widow film.

I felt the xame as you.
Also, Cap was always a character I found boring, and didn't follow at all.

There's also the part where Captain America just being a Fury like cameo doesn't even make sense for the character. Why would he be around but not be helping the Avengers fight? Steve doesn't seem like the kind of guy to just retire quietly. He's gonna die.

Ya that would be awesome news for Suicide Squad 2. GoTG was a good movie but it had a great cast, I don't think Suicide Squads cast was strong outside Magot Robbie and Viola Davis. Will Smith just playing a Will Smith character was 'aight' .. but maybe Gunn can re work the squad for the next movie.
