The Flames will want to announce the signing in Calgary in their own press conferences. Would kind of take the wind out of that if Gaudreau had announced it there.
(Plus I'm thinking he might prefer doing that together with Arnold.)

I think its because he's holding out for an announcement in Calgary. Makes more sense. Nothing has been officially released from the Flames at this point, anyways.

It's not unreasonable to think he was given the directive to not announce anything right? They probably want to announce the signing at the same time as Arnold and JG can probably understand that, right?

Well of course.
The ceremony is about excellence in college hockey. He isn't going to overshadow it by announcing a pro career.
