trying a new recipe for dinner tonight and both kids LOVED it and want the leftovers for lunch tomorrow at school!

Swedish Meatballs
Ingredients For the Swedish Meatballs:
2 Tablespoons olive oil , divided
1 onion , diced
1 pound lean ground beef
1 pound ground pork
1/2 cup breadcrumbs
2 large egg yolks
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1 1/2 teaspoon kosher salt
3/4 teaspoon fresh ground black pepper
For the Gravy:
1/4 cup unsalted butter
1/3 cup all-purpose flour
3 3/4 cups low-sodium beef broth
3/4 cup sour cream
Kosher salt and freshly ground black pepper , to taste
2 Tablespoons fresh chopped parsley , chopped
Instructions
· Heat 1 tablespoon olive oil in a large skillet over medium heat. Add onion, and cook, stirring frequently, until onions are translucent, about 2-3 minutes; set aside.
· In a large bowl, combine ground beef, ground pork, bread crumbs, egg yolks, allspice, nutmeg and onion. Season with salt and pepper, to taste.
· Stir mixture with a wooden spoon until well combined. Use clean hands to roll the mixture into meatballs about 1 1/2-in in size (It should make about 20-24 meatballs).
· Add remaining 1 tablespoon olive oil to the skillet. Add meatballs, in batches, and cook until all sides are browned, about 4-5 minutes. Transfer to a paper towel-lined plate.
· For the Swedish Meatball Sauce:
· Melt butter in the skillet. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in beef broth and cook, stirring constantly, until slightly thickened, about 1-2 minutes.
· Stir in sour cream; season with salt and pepper, to taste. Stir in meatballs and cook, stirring occasionally, until heated through and thickened, about 8-10 minutes.
· Serve immediately, garnished with parsley, if desired.

Also had a conversation with this woman who was folding clothes in the clothing department We've talked before and this time she told me she owns some horses and offered to teach me how to ride in the spring. As the conversation wound down I finally got the courage and I asked if she wanted to go out for dinner next week and she agreed

I went to Costco this afternoon to get a new shower head for the shower in the master bedroom. Also had a conversation with this woman who was folding clothes in the clothing department We've talked before and this time she told me she owns some horses and offered to teach me how to ride in the spring. As the conversation wound down I finally got the courage and I asked if she wanted to go out for dinner next week and she agreed
If things don’t work out it might get real awkward when you show up for horse back riding in the spring.

Took the kids to Disneyland and everyone survived and had a great time. I purposefully live in the middle of a forest, so that was far too many humans for my liking, but I will admit that place is pretty awesome. The Star Wars and Marvel areas were pretty mind blowing and San Fransokyo was really cool too. It was awesome making some special memories with the kids and my youngest is now constantly running around the house with a light saber changing between being a Jedi and “good guy version of Kylo Ren.”
Damn rights it did, Whitechapel is probably my favourite band these days and last time I saw them (trivium headliner) they had a very short set. This time was unreal hearing the saw is the law live, same goes for I will find you.

Haven’t been online for a few days so this one is a little old now. December 21 was the shortest day of the year, we get more daylight from now on. That makes me happy and is why December 21 is one of my favorite days of the year.
