Why cant it be both?

I'll concede that his menu is cheaper than i thought but it's still a ridiculous statement to expect that kind of pricing from a chef like Mario Batali in place like Calgary. Especially when you're using a menu that shows prices in USD and from a much more competitive restaurant market in New York

If you think American prices are similar, why do you think tens of thousands of Canadians go shopping across the border every year?

When I worked at Dominos, in the mid 90s, the cheese was over 10% of the cost of the pizza.

I worked at both Pizza Hut and Boston Pizza back in the day, and cheese is definitely the most expensive ingredient in the kitchen.

Lets keep this train rolling. I worked a summer at Boston Pizza during high school, and they were recording big losses from cheese overuse every week. They forced everybody to start weighing the cheese for each pizza because they found that people were putting on over twice as much cheese as was called for.

The chains don't use real cheese, do they? Isn't some kind of petroleum based cheese-substitute?

The cheese at Boston Pizza was whatever Sysco foods offered. The mozza and cheddar both came in huge 50 pound blocks.

I know all of the pre-shredded cheeses have a weird corn starch coating on them that makes them melt funny though.

Cheesecake Company:

$20, lasagna with garlic bread and side cesar salad.

I think there was ricotta, not much pasta, heavy on tomato sauce. Did not stay warm. 6/10
