I just missed a Sounders game when I went last summer, and I wish that I could have made it. I'd go for it, especially if you're into soccer.

Salty's is a must.
Skip the Safeco tour, it sucks. Go for the ballgame instead
Gum Wall - close to Pike's.
The Underground tour is not great.

Just enjoy it. Awesome city. I was there earlier this year, and am going back next year.
For coffee, check out Seattle Coffee Works. It's right by Pike's.

Go to a Huskies game if you're a football fan.
Amazing atmosphere, one of the nicest locations for a stadium in the world (right on the side of a lake with dock access to the stadium), and a top 10 opponent in Nebraska.
The Underground Tour is pretty interesting as well.

I third Salty's, it's damn fine eatin'. God I miss great seafood.
My suggestion: drink beer. If your beer tastes are non-big-brewery, Seattle has lots of good micro-ish beers, though I can't remember any of their names. Probably not a coincidence.
