Picross S and Picross S2 on the Switch are great. Highly recommended! I wasn't as keen on the other Picross games you can find on the Switch, though.

Cuphead is great - I'll double dip.
That LoZ / Crypt of the Necrodancer mash up looked good too - wonder how that one came together but really interesting to see Nintendo let an indie studio use their franchise.

I've got a 5 hour flight tomorrow so looking for a new Switch game to hold my attention. Here is what I've played so far and my thoughts on each one:
Zelda: Took a while to get into, but loved it.
Odyssey: Loved it
Mario Kart: Great multiplayer
Tropical Freeze: Loved the platforming, hated the boss battles.
Smash: Just not clicking for me for some reason.
LA Noir: Feels dated
Sonic Mania: Nostalgia didn't do much for me.
Golf Story: Not holding my attention
Oxenfree: Also, not holding my attention
Celeste: Loved it
Lumines: Not for me
Super Meat Boy: Fun in spurts, bot not over the moon with it.
Looking at picking up maybe one or two of New Super Mario Bros, Doom, Wolfenstein, Stardew Valley. Open to suggestions what do you think?

Personally I just don't think that New Super Mario Bros holds up to Odyssey or Mario 3D World so I would say pass on it. If you'd like to try a shorter platformer I'd suggest Octahedron. It's got some retro styling and great music. There's about 6 hours of playtime in a single run through the game and lots of replay value. No boss battles to worry about. I'd say it's pretty good to play on a plane.
I tried playing Mega Man X Legacy Collection on a flight but the gameplay is a bit too frantic in a tight seat!

I am in love with Enter the Gungeon. I just played it for a full 5 hour flight. It's an insanely difficult bullet hell game.
Stardew also got a lot of play time from both me and my wife.

From your list, Stardew Valley is amazing and my highest recommendation.
Not on your list, I’d really recommend The Messenger. Retro-ish Ninja Gaiden style game with some great twists, a funny/self-aware story, and one of the best chiptune soundtracks I’ve ever heard. Not enough people have played it!

I've been close to buying Stardew in the past, but something about just seems so...I don't know, boring? I've never played a game in that genre before, but I constantly see it ranked as one of the greats from this generation. Can you provide a little more context on what makes it so good?

If you have Twitch Prime (it’s included with Amazon Prime) you can get a free year of Nintendo online. I just tried it and it’s a bit of a pain because you have to do it in two stages (3 months first and then if you’re still a Prime member after 60 days you get 9 months) but it worked. It will extend your membership if you already have one.

I haven't played Stardew Valley yet but I've played Harvest Moon 64 and Rune Factory 2 and I enjoyed them. It's hard to really sell someone on a "real life simulator" so to speak, because "why wouldn't I just live real life" is the obvious rebuttal. But it's fun to go around in a fictional setting like these games, make relationships, build routines, participate in the various events that pop up on the calendar.
The seasons pass by and you move on to the crops and activities of each individual season, and next thing you know if in-game "years" have passed by and your character is suddenly married with children and a nice house. But that's really just ten or fifteen hours of game time.
It's fun enough that at least once, a game in the genre is worth playing.

Oh man where do I start?
It's just such an addictive, charming game. It was made by one guy over five years, and his passion for it and it's success as a singular, cohesive vision is very apparent. He knew exactly what he wanted to make and executed on every level.
Progression - it's crazy how deep the systems of it run, and how much fun it is. What starts as just a few crops in a field builds to a whole system of networked buildings, animals, and items. It's addictive in that you're always playing "just one more day" (the days are around 15 minutes of game time), and it's because you can't do everything in one day. You got your crops planted and did some fishing, talked to some townspeople, tomorrow your crops will be ready and you can explore the mines. Just one more day. You found a valuable gem in the mines and sent your crops in -- tomorrow you can afford to pick up some new items you've had your eye on. Just one more day. Next day there is a cool festival, need to see what that is about. Next day the Sunday vendor is in, need to see what they have this week. Next day the cops are ready again, gonna get huge influx of money and upgrade some tools. Then next day is a new season, have to see what that brings. Before you know it you've dumped 6 hours into it in one sitting.
The characters and story are charming and great. The music is wonderful and relaxing. There's so much to explore and discover, and you're never stressed out trying to do everything. Because there's always one more day.
I'm not always into these types of games (I find Animal Crossing dreadfully boring, for example), but Stardew Valley is just a masterpiece and the best of it's kind. It was my game of the year for 2017, probably a top 5 all time game for me, and has my highest recommendation.
