Speaking of Expendables (for any tennis fans), Novak Djokovic was supposed to have a cameo role in Expendables 2, but was cut out.

Sean Connery in Robin Hood Prince of Thieves - since everyone already knew that King Richard shows up at the end they used the cameo to get the "surprise" at the end.

Any of the cameos in the Princess Bride.
