In other words, its common enough through upbringing and cultural pressure to want to pass yourself off as straight, only to turn the corner later. But are their straight guys who live a gay life and then realize they like women after all?

Well, the question of Bisexuality could come into play here, as (apparently) there are men who like to sleep with both men and women. If a gay guy had sex with a woman, but is STILL attracted to men (heck, maybe women too) then at best he is bisexual.
Also, the second part of your question might be a little off. I'm pretty sure 99% of 'families' in society assume they're kid, at infancy, is straight. Maybe some don't, but I've a feeling most parents will instinctually treat they're kid as straight (ie blue stuff for boys, pink for girls). Most people are simply raised with the parental assumption that they're straight. Few 'families' assume that they're infant is gay, and try to raise them in a homosexual lifestyle.
The point there is that everyone is raised to be straight (or most of us). If you're gay, then you'll 'switch team's. If you 'switch' back, it'd be pretty odd for you to all of a sudden dislike men (sexually), despite having several voluntary sexual encounters.
If your question is seeking examples... I've known a couple gay guys, and none appeared to be wavering as to their sexual orientation.
Like I said, bisexuality is the easy answer the the question.
