The Utah Coyotes seems like a good fit! Name should be free, as I doubt very much the Coyotes name will carry on in Atlanta.
I kid, I kid...
Utah Monsters (the Gila Monster lives there)
Utah Rattlers/Rattlesnakes (would be annoying, but I can see marketing ideas with baby-like rattle giveaways/promotions)

Place is super cool. Most beautiful state in the US. You can ride the Trax 15 minutes from the brand new airport to the Delta Center and downtown, very convenient.

The NHL has seven teams in Canada. All NFL teams are in the U.S. That makes a difference in terms of market penetration.

The NHL will never give out an expansion franchise on those terms. The league has not been ‘OK’ with the Coyotes playing in a 5,000-seat arena, but they accepted it as a temporary measure; just as they accepted the Flames playing temporarily in the 7,000-seat Corral. I don't see them accepting any permanent arena smaller than Winnipeg's.

Being in the Jazz stable, it would make some sense to run with the colour palette of the Jazz: Black, yellow and white. Which lends itself to a Bee-related name.
The ownership group also has financial stakes in MLS side Real Salt Lake, which uses blue, red and gold.

Which is exactly why I thought it was surprising they'd be interested in going to such a low populated city.
Winnipeg has 4x the population of Salt Lake City.
