Here's a random internet poll showing 37-63 in favour of people who are wrong. But it also asks if it was Thursday. I suspect polling of people would change if you asked the question on a Monday. (Which shouldn't happen but i suspect many people use the phrases interchangeably).

But when you say you are camping, you've suddenly given some context to your plans. Most people camp during the long weekend, so it would be much easier to imply you are meaning the long weekend.
If instead you said "I am going to the store next weekend", I think it would be much less clear if you meant 5 days from now or 12 days from now.

When using past tense, "this weekend" means the weekend that just passed. If you want to find out what somebody did the weekend 7 to 10 days ago, you would asked them "what'd you get up to last weekend"?

OK, it's Monday today. If I say "what are you doing next Friday?" I'd guess 95% of people would agree I mean the one in 1.5 weeks.

No way. How can the next Friday not be the next one that occurs. At least with weekend there is an argument that the weekend is part of the week therefore you are referring to the end of next week rather than next weekend.
But next Friday has to be 4 days from now. Otherwise the word next has no meaning. Next in line is not the third person. Take the next exit means the next exit. Next week means the next week. Next Friday cannot mean the Friday aftwr next Friday.
At best you poll 60%.
I have learned never to use the phrase next weekend now as it is pretty ambiguous given people's different interpretations. This argument is carried without consensus on numerous places on the internet.

Next weekend is next weekend because this weekend is this weekend and everyone everywhere will understand what you're talking about if you go by this. You can debate the opposite all you want, and your usage of it in the real world will continue to give those speaking with you confusion.
Take note of how many times you're getting the response "Do you mean this weekend in a few days or the weekend after that?"

Regardless of my usage if I am getting the do you mean .... it means it's ambiguous. People would just interpret it wrong if there was no ambigiuity.
Show me any evidence of it being unambiguous. I'm certainly willing to concede there is no correct usage here. So everyone who uses it to mean not the next weekend is still wrong

Turns out that when you turn on the Outlook calendar stats holiday schedule it doesn't know how to do the rule when the Stat falls on a Sunday.
So when I asked my boss to confirm that we were closed on Monday he looked at me like I farted in church.

I think we need a poll.
"This weekend" refers to whichever weekend is closest. For example, on Monday and Tuesday you can ask the question, "What did you do this weekend?" and the person responding will tell you what they did the previous Saturday and/or Sunday. A person could then follow up with "and what are your plans for next weekend?" and they would be referring to the other persons plans for the upcoming Saturday and Sunday.
As of Wednesday the questions become "What did you do last weekend?" and "What are you up to this weekend?" At that point, next weekend becomes the following weekend.
