Lots of reasons. They're not particularly rational when you consider the risk of not wearing one, but we're adults and can make our own decisions when they affect no one else's well-being but our own. [shrug]
I don't wear a cage because they're uncomfortable. The chin-cup, in particular, is my least favourite aspect of it. Sweat and water gets in there and it bugs the hell out of me.
Full-face clear shields suffer from the same issue, but also have the added problem of fogging, and it screws with how I perceive sounds on the ice (direction of origin, specifically). I found I wasn't as sharp when I wore one simply because of this. Regularly using one, you'd likely adapt to this, but considering that I don't play a lot, I'll take my chances.
And the other reason (one that I don't particularly care about since I look silly in a helmet anyway and would much rather 'Gordie Howe' it) is that full shields don't look cool. Told you it wasn't rational.
