Little Hippies, Trico and bricks4kids all have 1 day camp options.

Ditto on Sait, although they fill up fast, this is the 4th year my kids have attended.
If you live in the NW Butterfield Acres has a neat one week camps.

The University has great day Camps that last 2 weeks each for kids. Probably a 100 different interests to choose from.
