Yup. Their hamachi with jalapeno is regarded by a lot of critics as one of the top 5 dishes on the continent - amazing how something so simple can be so memorable.

Varies by visit I suppose. Unless service is beyond-the-pale atrocious or spectacularly awesome I usually don't even notice it and as a result my opinions of different restaurants are shaped almost entirely by the food itself. IMO, beef is what Calgary does best, and the cowboy chop at Vintage is the best cut of beef in this city.

But you could just as well spend your money at Sugo or Notable or Muse, I just threw in Vintage as one example.

My desire for eating any seafood gets stronger the closer I get to the Ocean.
I really don't eat too much of it at all in Alberta, and if I do, it's not like I'm expecting something fantastic.
However, when I'm out on the island or in Vancouver, the urge to eat Seafood is far stronger and I seem to enjoy it way more.
It, being better, fresher etc. might have something to do with the fact that I just want it more there.

The Omakase menu at Tojo's is an amazing experience. The best Japanese fare I've ever had - the combinations of ingredients and preparations were unreal. Bring your wallet though cause it's not a cheap night out.

For sushi, location of the restaurant does not indicate "freshness" of the fish, they are all relatively the same, especially in Canada, because all fish sold at sushi restaurants have to be delivered and stored frozen to ensure food safety and allow the restaurants to sell raw food. It's all about the fact the best sushi chef's go to Vancouver that the sushi is better, plus those restaurants probably have first choice in fish, especially if they go to the fish markets themselves to pick out the fish (Like Tuff City Sushi in Tofino does).

Other than some local seafood, how does the sushi quality fish vary from Vancouver to Calgary? They have to fly it into both centers.

OK, so for everyone who has had sushi outside of Calgary. Do any of you have recommendations for San Diego? I will be there this weekend and I figure since it's on the Pacific, they might have some good Sushi down there. Also, will it be better than sushi in Calgary? I have been recommended sushi in Toronto, maybe it was the place I went, but the quality there was atrocious considering how busy the place was.

I have never been to Japan, but I would bet, from my experience with LA and San Fran, that California sushi is the best sushi you can get outside of Japan. I have never had any in San Diego but yes it is likely going to be significantly better than Calgary.

If you're spending any time in LA at all, though, and have a chance to have a meal there, there are some of the best sushi joints on the planet in that city. It's above NYC and Vancouver by most peoples' standards.

I live in Vancouver, and I've also spent a couple of weeks in Japan eating sushi. You could find better sushi in Japan if you were willing to pay for it at very high end places. The sushi in Japan at your average sushi joint was very comparable to Vancouver though. Vancouver has great sushi. The stuff in Calgary is garbage. No one should ever eat a California Roll ever.

I haven't been, but I have friends who swear by Sushi Ota. It gets busy, though, so you'll have to make reservations if you want to sit at the counter (and if you're paying for high quality sushi, you do want to sit at the counter).

Again going back to Tojo, I have never HAD a california roll at Tojo's, but as he claims to have invented the things, I would be interested to see what his taste like. It would probably be disappointing though which would explain why they're not on his menu.

My sushi eating experience is limited to eating the vegetable combos from Sobey's and Co-op. You know why? Seafood sucks! That's why.

The best sushi in Vancouver is Nao sushi in Burnaby. Chinese people in Richmond actually drive to burnaby for this. YES it's true! shocking.

What is up with your obsession with Richmond and asians from Richmond as some sort of ubermensch taste-makers in Vancouver? It's really weird.

In addition to about 60-70 other sushi joints in Vancover, I have been to Nao. I remember enjoying it. It is not the best. Ironically I have had better sushi IN Richmond.
