The main quest is the first one you're given (where you slay the dragon outside the town and then get sent to the greybeards). Just keep doing the quests that spawn from that one if you want to finish the game as possible.
One of the nice things about the Elder Scroll series is that you don't really have to re-roll. You can just start specializing in something else. It's easier if you max out whatever specialization you're currently doing (magic, archery, one-handed, two-handed, etc) before moving on to something else, but there's nothing that prevents you from just starting over doing something else. If you find it too tough, it's possible to "train" your skills until things get easier.

All true - except the perk trees are pretty extensive and you have to carefully choose which you want to max out, especially if you want the smithing/enchanting perks.
Lockpicking isn't a good one to choose, unless you really, really want to be able to pickpocket equipped stuff.

Just deactivate the quests on your journal and activate the main quest.

Haha I think I totally cheated on a part. There was a dragon guarding some words of power at a shrine near Snowveil Sanctum. I killed the dragon, went to get the words, and a super strong skeleton mage dude popped out. I was absolutely no match for him, so I ran away.
Tried a number of different approaches, no luck with anything. So I took the coward's way, and succeeded! I just hauled ass into the little shrine, got all three words (for some reason he didn't round the corner and obliterate me) then hauled ass away. Take that!

Good point. There's no way to in Skyrim to unlock every single perk. Although you can raise every skill to 100 (as in Oblivion).

I tried the morrowind that was on Xbox - not 360. I didn't really like it much I'm not even sure why, i lost interest within hours... so I didn't give it much of a chance. I think oblivion? Came out afterwards...
So my question is with little or no experience with this ... franchise... for lack of a better term coming to me atm, would I be able to pick up this game and play without issue? I can't even remember why I didn't like the original and lost interest in morrowind... Has much changed other than graphically updated... would you say the game mechanics and play are still similar...
Everyone is raving about this game... I feel like I'm missing out on something unique and enjoyable... but I don't want to spend $50-60 and not play it for more than a few hours...
If you had to guess at something that would turn off a newcomer to this game what would it be?

This also means that if you choose something beyond your current skill, it will bump your skill to that point. If you tried to go more, and set the skill to your current level, I could see some bad things happening.
Ran it quick, and it seems to run fine. Exp was maintained on each skill and on your level.

No you can't be both at once. You can't cure werewolfism with vampirism because as a werewolf you have 100% disease resistance and catching vampirism requires catching a disease in Skyrim, so that won't happen if you have wolf blood. You can only cure werewolfism through a quest, vampirism can be cured by becoming a werewolf or another questline.

Leveling Alchemy makes me sad.
Why is it not as easy as "Spam Iron Dagger" ??

That skeleton Mage actually drop a really good masks that is quite good, something like +20% lock pick, archery and sneaking each. I believe it's one of the 8 unique mask you can collect.

That guy scared the crap out of me. I believe I literally had to "flight" right after that exchange of might over magic.

First time I fought a Dragon Priest was right after I fought a Dragon and was at a point where I thought I was just gonna roll the game in Orcish armor at level 20 or so. Charge in, power attack, expect atleast half-dead dragon priest. Barely a sliver of life. Then got pimp slapped. When I went back and killed Krosis, I felt like a boss though.
