I have been doing this for three decades. That is a long time for trial and error.
As for the "crappy BBQ" comment.. puuuleeeease. I can cook as good a
steak on a firepit at a campground as I could on any BBQ you put forward. Perhaps even better depending on the wood in the firepit.
