I'd try Great Plains Cresting as well they have done all my jerseys.

Don't they have a machine right at the Saddledome fanattic that puts the names on? Or do they actually have to send them away and the saddledome only does silkscreens?

The machine basically glues namebars and numbers onto the jersey. I'd get it stiched personally.

Here's how it works.
No one will take off the name for you. Not Jersey City, Not FanAttic, Not Great Plains Cresting. Why? Cause they all follow the same policy and Great Plains (JC and FanAttic send their cresting there) will not risk damaging the jersey while removing the name.
If you can find a tailor or seamstress that will take off the name, or if you can do it yourself, anyone of the above locations will gladly take your order.
The cost will be around 30-50 Dollars depending on the team/jersey (has nothing to do with letters) and it will take 2-4 weeks. (They will tell you 3-4 to make you happier when it comes in after 2 weeks)
One thing to note is that official cresting uses stitches + glue. If you're switching a long name, for a shorter one (Phaneuf for White) be aware that unless you mention that you want the name bar to cover the glue (which may look odd) there will be glue visable.

They shouldn't be. .
Unless Jersey City has negotiated with a tailor in Regina.
Go to anyone in Calgary and they'll tell you that you need to take it off yourself.
here's the price layout for a name bar (Just the name. The OP doesn't want to switch numbers or anything)
$30: One Color Name Bar (Maple Leafs, Red Wings, Canucks... etc)
$40: Two Color Name Bar (Team Canada, Flames etc...)
$50: Three Color Name Bar (Bruins etc...)

All I know is the guy in my section who had a "Phaneuf" jersey on for the 1st period had a "White" jersey for the 2nd period of the Philly game.
