Getting someone's ring size
I'm NOT proposing...  Just getting an anniversary gift.
I do not want to stealthly take one of her rings without her knowing... 'cause she'll know.
Ideas I have so far:
1. Take ring. Place beside coins (nickle, dime). Take picture.
2. Take ring. Wet edge with something. Make imprint.
Any other ideas?

Take ring she doesn't wear all the time but fits. Bring to jeweler.

Yeah_Baby - Don't wanna do that. Would ruin the surprise if she notices.
CMPunk - Another good idea.
Frig I'm not even sure if she wears a ring right now on her middle or ring finger of her right hand... I think she just wears one on her thumb... if I can only get one of her thumb, is there a reasonable estimate of her other fingers based on that?

LOL. No, what I mean is if I get the size of her thumb ring, is there a reasonable estimate of how much smaller her other fingers might be.

You'd be better off to base it on the same finger on the opposite hand -- so, off the ring finger of the left hand for example. The index, middle and ring fingers will be fairly similar in terms of size. It's not exact, but it should get you somewhat close.
As for finding a size, if you can, you can always just try on one of her rings that you want to judge against (even if it only fits up to the first knuckle on your pinkie). You should be able to get enough of a "feel" from that to make an educated guess. Combine that with one of the other suggestions above, and you'll be fine.
Really, you just want it close enough to size that she can try it on. That means to err on the side of slightly too big, rather than too small. The exactitude can come from sizing at a later date, if need be.

I like CMPunk's idea. I understand you want to get it right but the jeweller I bought my wife's engagement and both of our wedding rings through said he will always exchange for a different size later on with no extra charge. I can give you his name if you want. He has a real good selection of rings not just wedding and engagement rings.

Best tip I read (after I proposed):
Use a long tapered candle, and thread it through a ring that fits. Where the ring stops with a bit of force, you'll have an exact impression of the size.

Most jewelry store will do free resizing. I know Mappins with do resizing on all three of our rings for nothing

Here's a couple tips that have worked for me-
A/ get her really mad so that she throws one of her rings at you... Then, just don't give the ring back until after you get it sized at Mappins
B/ get her really mad so that she slaps you really hard. Then, take your sore cheek with the ring dent, and hopefully the correct size, to Mappins
C/ get her really mad so that she flips you the bird... Snap off a quick picture on your iPhone and take to Mappins. Hopefully they can judge ring size with picture
D/ live happily ever after!

With the free re sizing, I simply really sized her finger up to mine, then when I bought it just estimated by trying the ring on, and seeing how far onto my finger I could get it. When I gave it to her it was slightly to small, so she had to wear it on a different finger for the night, but the next day they made it bigger for her.

See if a jewelry store will lend you a ring sizer tool and make sure they show you how to use it. Go home and try it out. Don't take any of the estimate suggestions people offered, simply get a true measurement. You won't regret it.
How could you not know her assorted sizes? My wife has them written down for me.

I like that candle idea, I †hink jewelers have a sizing tool shaped like that.
I wonder if SillyPutty would work in a time-sensitive situation, say when she was in the shower or something?.
