I have a 7AM flight to Houston on Monday. Does anyone know what time the US Customs opens in the morning?

I suggest getting to the airport by 4AM... a lot of US flights go out at 7, 7:30 so you can imagine customs and departure level being jam packed.

5-5:30 should give you lots of time.

I believe you can't enter more than 2 hours before your flight as well?

Yes, going to Phoenix we had to wait until exactly 2 hours before our flight. There was some grumbling, but the security guy said that prior to the rule there was an average of 1 flight per day delayed because somebody got jammed up in customs; and since the rule no problems.
