What the hell is this and how do I connect a natural gas grill to it?

looks like that square is a plug in the end you'll need to unscrew. But then again i really have no expertise in the field and own a propane grill

I'm no plumber- but I think it's a thingmadoodle designed to make sure the gas cannot accidentally be turned on.

That thingamabob is what you use to connect the hose from your natural gas BBQ too. I had the gas company come out and install a connector on the end.

I had the same setup and did it myself. You'll need to buy a fitting and some pipe dope from BBQ's galore or something similar. Either measure the size of your pipe or bring the "square thingy" with you. Afterwards, remove the "square thingy" if you haven't already. Put pipe dope around the threads of your fitting, tighten it in, but not too hard. Done and done.

If you don't want to mess around with pipe dope you can just get some gasfitting tape. You wrap it around the threads of the male fitting just like using teflon tape for plumbing. It's much cleaner than dope and you should be able to pick up everything you need at home depot. Just make sure you don't try to use teflon tape, it's not the same thing. Teflon tape is pure white, the stuff for gasfitting has a definite yellowish cast to it. I did this at my old house and converted my old bbq from propane to ng without a hitch.
