The best sports sim on the Wii is MLB Power Pros. Yes, it has cartoony graphics, but it's the deepest and most realistic baseball game on any system hands down. It doesn't use the motion controls (except in exhibition mode), but it's still a must buy for any baseball fan.
NHL 08 isn't on the Wii.
For shooters, your best options are Metroid Prime 3 (which is amazing) and the recently released Medal of Honor: Heroes 2. Metroid Prime 3 is more of an adventure game than your typical shooter with a heavy emphasis on puzzle solving and huge boss fights. Medal of Honor is your typical WW2 shooter except it has the best controls of any console shooter and is the only Wii shooter with online play. I'd recommend Metroid Prime 3 to anybody personally, but it's just a matter of what kind of game your son would prefer.
Mario Galaxy is a must-buy.
Warioware is another great game IF he's going to be playing multi-player a lot. If not there's better options for single player experiences.

IGN.com and Gamespot.com have plenty of Wii game reviews as well, which may be helpful.
Madden for the Wii is great. If you want to hike the ball, you make a hiking motion. If you want to pass? Make a throwing motion! It's intuitive and incredibly fun. Madden 07 won Gamespot's sports game of the year for Wii. If he likes sports and has a Wii, Madden 07 or 08 is a must have. It also includes fun mini games for quick games with friends, and a simplified control mode (Madden 08), so anyone who isn't that good at video games can still have fun playing Madden.

More amazing and much harder I would think... you're 'puck-handling' against NHLers there... You'd have to be pretty good to win at the harder levels.

Super Mario Galaxy is the best video game ever.
Zelda: Twilight Princess is a must have.
Other than those two it pretty much depends on whatever kind of games he likes. Since he likes sports and shooters I would reccomend MLB Power Pros and Medal of Honor: Heroes 2.

From that I have (and would recommend them):
Mario Galaxy - Best game. Must have.
Mario Strikers - Great game, especially the mulitplayer.
Zach and Wiki - Very, very fun. Puzzle Game.
Paper Mario - Very fun.
I have also rented Metroid. Its a good shooter / adventure as well.
I also have Mario Party 8 and Monkey Ball. I wouldn't really recommend them, but they may be okay for kids.
In February, Smash Brother Brawl is a must have.

Zelda, of course, is an absolute must as is Galaxy. However on the weekend I had the chance to play the Mario and Sonic Olympics and it was great fun. Love the Dream Race and lots of the events are fun. A super workout for the arms -- it's probably good to play a few events and then play something else and return to the game LOL as it's a for sure sweat inducer!!!
