I'm not so sure its so much an obscure channel as it might be obscure programs on obscure channels.
A few for me revolve around real-estate, typically Brit shows, about buying second property in places like Tasmania or Puerto Vallarta, or dragging clients around to view three or four properties in England that might fit their tastes, or dressing up a property for sale in a foreign land that's been an albatross to this point. All interesting.
Hospital emergency room shows . . . . holy tamole, you feel like shedding a tear every hour!! A shameless voyeur in tragedy. Sandra Bullock is addicted to these as well.
I do watch veterinarian shows . . . . . and I just had to ask our own veterinarian a few months ago if 1) she watches them too and 2) if she prefers the Brit versus US/Canadian ones.
She said she watches the Brit vet shows because she can scream at the screen for them to practice better hygenic practices for their surgeries (face masks, etc).
Another obscure show I'll tune in once in awhile is "The Real Housewives Of Orange County." I think it's on Showcase and their disclaimer is " . . . . . for a mature audience, even if it seems very immature" or something like that. It can be surprisingly tender - as when one of the wives under documentary scrutiny has to face a recurrence of cancer - and remarkably shallow.

I find most of what I watch now are specialty channels.
I watch a lot of HGTV, National Geographic, Discovery Civilization, and Discovery Channel.
I also will throw on G4 (the American version) if there's nothing else on.

NFL Network. It is probably on our tv 50% of the time. My 8 year old daughter knows all the commercials by heart, "T.J. Hoosh-man-zode". I really can't get enough of their program America's Game. Now I just need Bell to offer it in HD.

RDS in the winter for Habs broadcasts. Sportsnet HD for Jays baseball in the summer. I have the IFC/Showcase bundle but I'm more often disappointed with what's on those the majority of the time. I like movies, why are you showing me reruns of CSI?

History channel - some great shows, there's a new one called dogfight which is quite cool. Also thier history of warfare shows on Thursday are good.
Discovery channel - some really cool shows there, got hooked on futureweapons for a while, and mean machines
Documentary channels - Don't watch it all the time, but they have some solid shows on. But the two hour movie about the 80 year old who's passion was painting flowers put me out like a light
Biography channel - Too many hollywood biographies, but I usually find a couple of good ones a week.
The T.V. in my office never changes from the NHL network in the winter. I hide the remote control after I take out the batteries because my girlfriend used to always come in and change it to some home redecorating show.

I like the Food Network, but:
New Rule: The women of the Food Network have to stop faking orgasms when they taste their food. Half of that programming consists of cute, spunky women putting things in their mouth and giving us their "O" face. On top of that - The Golf Channel is key, as is CMT.

I like Discovery and Discovery HD as well. I'm always flippin' by Discovery HD to see what's on.
Question though - and something that I thought that currently sucks on Discovery. I have a Bell ExpressVu and am a big fan of Deadliest Catch on Discovery. However, for some reason, the Discovery channel I get isn't showing it (I know it's on as the season finale was supposed to be last night). Is this some stupid difference between the Discovery US channel an Discovery Canada or what? I haven't been impressed that I haven't been able to find the Deadliest Catch on the Bell - it's a great show...

Fight Network, Discovery Civilization, IFC, National Geographic, G4 tech (lots of reruns though...) And obviously the NHL Network.

The doc channel is good but they don't have enough original programming. They same stuff all the time.
National Geographic is good as is Discovery, TLN, and The History Channel.

Yes. Discovey USA is different than Discovery Canada; and both are different than Discovery HD.
Which means I have 3 different Discovery channels showing 3 different programs at any given time.
