So in the interests of myself, I have decided to start a thread about omelettes.
I love them, but I'm getting bored with my old standbys -- green onions, tomatoes, mushrooms, green peppers, monterey, cheddar and mixing 3 or 4 of those up in an omelette. I tried looking on the foodnetwork.com and a couple other places for some new ideas but they have crap like "crush the peppercorns with a rolling pin" and "season 3 off the 12 eggs and set them aside". I don't need nothing fancy like that, just some different ingredients to throw in a standard omelette that takes no more than 10 minutes to prepare.
Ideas?
*btw, I use that egg white stuff in a carton and if you spice and cook it right it can taste good and not like rubber

Cut off a bit of a jalapeno pepper and throw that in the mix. It adds a nice bit of heat without being too intense.

I cut up those little breakfast sausages, onions, mushrooms, peppers and whacks 'o' cheese. Tastes pretty good. Sometimes I'll pour some salsa over the top when I'm ready to eat it.
Oh and btw, this is an awesome thread!  I love it!

This is a great site for breakfast recipes in general, and omelettes in particular.
Try the peanut butter omelette!!

Two things that help make a great omelette. Whip the eggs as long as possible, get a nice foam at the top. When those things are mixed for a good amount of time they just test better. I usually use just a drop of milk as well.
Instead of trying to flip the omelette and make an ass out of myself I just slow cook it on one side add in the ham and cheese (mine are usually simple) let them slowly melt and cook together. Then I take a rubber spatula and kind of roll one side over tilting my pan towards my plate and then let it kind of "snowball" onto my plate from the pan. Damn tasty.

Mmmm... now I'm hungry again. Unfortunately I have no tips for you as I seem to use pretty much the same ingredients as you do. Although now I have a wealth of ideas that I'm going to have to try.

Fry some sausage, mushrooms, and onions in maple syrup before adding them to the omelette.
I'm also a fan of cheddar in omelettes, but it has to be Cracker Barrell sharp cheese. Feta works well, too. Try a greek omelette with feta, ham, peppers, onions, tomatoes, and pitted kalmatta olives.

Well, I just tried making one out of odds and ends from the fridge/cupboards... I don't recommend the following:
Hot dogs sliced very thin
Velveeta cheddar
Black forest ham
Tuna
Sweet sliced pickles (after cooked)

LOL well I probably wouldn't have come up with that combo in a million years of omelettes but thanks for the heads up.

You could always add smoked salmon, or baby shrimp to your arsenal of ingredients. Something that is popular that we make is asparagus and Brie cheese omelettes. Like other people have mentioned, sausages are quite good as well, I'm particularly fond of spicy Italian in omelettes. You can even use salsa as a filling, just before you fold or roll it up. I have also seen recipes for apple and brie cheese omelettes.
Hope those help you out a little

If you're going to have eggs and a bunch of other stuff, I recommend just going all out and making huevos rancheros.
My personal favourite is: olives, tomatos, potatoes, garlic, cheese slice, avocado, and salsa.

Hmmmm, green onion, cheddar, refried beans, lettuce, with a side of sour cream and quacamole. Perhaps even put some tortilla chips in the omelet..
so basically a taco/burrito with the eggs as the shell.

At home I always make myself one of these three:
Hawaiian Omlet: Cubed ham, fresh pineapple, and mozza. Season with Oregano.
Baked Potato Omlet: Cubes of baked potato, bacon bits, chives or green onions. Top with sour cream after it's on the plate.
Splumbo Spicy Italian: Sausage cut in small pieces, chopped serano pepper, mozza. Top with spicy tomato sauce.
Really very tasty.
