I agree with the Ipod- they are awesome. That or perhaps some flames tickets. Good luck finding an xbox360- but if you did you'd be a hero for sure.
As far as the 31 year old female, you could get her a spa package or something like that.

For Christmas my mum gets a kiss on the cheek, my dad gets a handshake, my sister gets a hug and then we all go down to prison to see the rest of my family.

16 male: Illegal drugs and hip hop cd's
28 male: Rogaine
31 female: Lingerie and Rampant Rabbit
45 male and female: A holiday away from 16 year old male

just kidding. If you are really spending $500 a person you can buy some great presents. You can go for presents that lots of people will be getting such as the xbox and the ipod or you can buy things people might not expect. Like those days out racing those amazing cars, helicopter flying lessons, holidays. Or just give cash, makes shopping so much easier :P

16 Year Old Male - Xbox360 or an MP3 Player (I really don't recomend an ipod though), or another idea would be some sporting equipment (read hockey equipment), some Flames tickets, or something of the like. I assume you don't want to go up to the 500 dollar max, so I would say a Flames jersey and a couple of tickets, as well as a bottle of vodka behind the parents back. One unique gift I recieved once was money to purchase stocks with, now that is more of a dad gift, but it was interesting none the less (I appreciated it more later on down the line).

28 Year old male - Depending on the person, but generally a gift certificate to a store like chapters would be the best option.

31 year old female - Day at the spa is always a great route to go. Other options involve a very nice dinner (depending on relation to her).

45 year old male/female - I know a lot of people won't like this one, but I have found this to be a great route to go and get a nice bottle of wine, and then donate a couple hundred to a charity for each of them. It is appreciated quite a bit more than I would have originally expected. Make sure the charity for each of them is something that they would have a special interest in.
