HD broadcasting question

I added the HD package this weekend and have a couple of questions about the difference in broadcasting.

Why do some broadcasts not fill up the entire screen (bars on side) and others do? I can fill up the entire screen for those that don't by using partial zoom, but I can't figure out why the difference.

Last night, CBC broadcasted the Leafs game in HD. The difference in quality was better, but not that much. Today, I am watching some HD NFL on ABC and CBS and the improvement is kick-ass. It's stunning how good the quality is compared to last night's hockey game. Can I expect some good quality hockey broadcasts from TSN or SN, and why the difference? Thanks.

How I understand it is if it isn't widescreen [16X9], it isn't HD. The CBC leafs game wasn't a HD picture quality to me. You can expect some good quality HD broadcasts from TSN and hopefully from CBC when they get their act together. SN won't be broadcasting any NHL HD this year. The Centre Ice package is broadcasting some games in HD also. The only problem with HD is, it has spoiled me for regular TV.
