So my slopitch teams are having a windup party were everyone is to bring a potluck dish that they have never tried to make before. Call it a kamakaze dinner....

I have done some leg work on this and found one recipe that sounds very promising called Shrimp and Scallop Salad in Avocado Cups.

Do any of you have "to die for" type recipes that are sure to make mouths water? Preferably it would be preparable prior to transportation to the party, but any suggestions would be welcome to all posters here. Have at 'er!!

Try an eggplant lasagna. Not too hard to make, and you would never know there is no meat in it. Lots of recipes here.

Portabella mushrooms are another great idea either as a topping for all the meat eaters, or as a main course for the vegetarians in the crowd. One I found:

1/4 cup olive oil
2-3 tbsp soya sauce
1 tbsp balsamic vinegar
3-4 portabella mushrooms.
Emulsify with a whisk
Marinate them like 1-2 hours, and BBQ

Again, they taste just like beef and make great low cal burgers. You coud aleays mix the above with fried onions as a steak or roast topping and it would be pretty tasty I'm sure.

I only have a killer potato salad recipe, but it's not written down, it's an add it as you like it recipe.

Also oatmeal raisin cookies... good stuff. Don't have that handy though. Stupid work.

Thanks forks... except FireFly... what a puss!!! <kidding> I also have a salad that is "an add it as you like it recipe".. Seafood pasta salad.... awesome.

I will add my own tidbit about recipes.... Steaks!!!!

Want a truly juicy BBQ steak? Cooking is the key... Marinade as you like, choose the BBQ sauce of your taste, but cook it this way....

Get your grill to 400 F (200 C.) Seer the steak two minutes per side, then cook for five minutes per side for a very juicy and tender MEDIUM result. (Typical at 3/4 inch to 1 inch thick steaks). Slightly longer (30 seconds to a minute) per side for thicker steaks and/or more cooked result, likewise, slightly less (30 seconds to a minute) for thinner steaks and/or more rare result.

Never fails.

I love cooking indian food.

Here's a really simple peasants kind of breakfast called kichri. It's actually a British/Indian recipe but it can be eaten at any time of the day and doesn't require an assortment of rare spices. Although you should see my spice cupboard.

Ok so take 1.25 cups of white basmati rice and 0.5 cups of dried yellow split peas.

Roast them in oven at about 400 for 10-15 minutes. Don't burn them.

While they're roasting, sliver two onions and fry them until they turn brown and crispy in about 2-4tbps of ghee or oil.

Take out about half of the onions and save for later.

Throw the roasted rice and peas into the onion mix along with 3 cloves, 2 inches of cinnamon, one sliced green chili, a clove of garlic, an inch of so of minced giner and a tsp of turmeric powder. Fry those for a couple of minutes with the onions and then poor on two cups of boiling water.

Reduce heat to minimum and cover quickly. Let it cook for 15 minutes.

Take the cloves and cinnamon out.

oops forgot this step: spoon up the kichri and top with the saved onions

Thought I would follow up on this. We had our get together last night, and there were some good dishes presented.

The hosts gave a prize for the best dish as voted on by all. The winner, in a landslide, was the recipe I posted to begin this. It came out awesome, and wasn't hard to make. Cost about $30 for 16 servings (double batch). Tip though. Make sure you know how to pick properly rippened avocadoes!!! I humbly made a second journey back to Co-op after finding the ones I first bought were not ripe enough yet.

Will give Hakan and Tron's dishes a go in the near future.

Really good chicken.

X number of boneless, skinless chicken breasts, modify other ingredients depending on number of breasts, the amounts below are good for 5.

Fresh Rosemary leaves (minced) or dried rosemary (1 teaspoon)

Pinch of Garlic Salt

2 Tablespoons olive or canola oil

Dash of lemon juice

Pinch of salt

Shredded reduced fat cheese

Combine everything but the chicken and cheese in a small bowl and mix it up. Brush the mixture onto the chicken and place chicken on a plate. Cover with plastic wrap. Refrigerate overnight.

When ready, preheat oven for 375, spread chicken out on baking pan, very lightly oil the pan with olive or canola oil.

Cook for 10-15 mins until the chicken is cooked and juicy.

Sprinking each breast with shredded cheese during the last 5mins of cook time.

Serve while it's hot!
