I picked up a couple of artichokes to put in a pasta dish and realized I have no idea how to cook or what you eat on this damn thing. Anyone have experience with these?

Hey Goon,

WEll I'll take a stab at this one. Although I don't know if I will be of much help, as the g/f did it..

But we bought some, canned. Just put them on our pizza and cooked them in the oven. Voila! Done...

We also put them in our pasta, with basically the same idea I think? Just stirred it in with the pasta, maybe left it a tiny bit just to warm up. That's about it, I think....mind you both of these times they were canned ones...

I steam them untill they soften up. You should be able to stab a fork into the bottom. The leaves will just peel off and you eat the tip of it. I usually just dip them in mayo and eat them right off of the leave.

And as you peel off and eat the leaves (just the end of the leaf) you eventually get to the Heart of the choke. That is the good part. Scrape off the thistley looking junk and eat the heart that is attached to the stem.

I like them dipped in a little melted butter or with lemon.

1) Boil or steam to get them soft. Melt some butter and add some lemon. Dip each frond in and eat the frond tip. Takes a while but is nice with a glass of white wine as an appy.

2) cut in half; soak in orange juice, oil, thyme and lemon for a while (few hours). Then grill it. yummy. You can use that marinade for grilling any veggie. I get lots of rave reviews for it and it is easy.

In case any artichoke lovers our there arent aware, the stem is just as good as the heart. Leave it on the next time you steam them. Give it a little peel and bam-o, bonus heart.
