Great Plains will only strip the numbers/letters if they're the ones who stitched them on originally. Chances are, they did. But I don't know if you'd need some sort of proof of that. I'd asked them a while back if they could strip a Whalers jersey (which they did not customize), and they said no. But you could always call around to different jersey makers around the city, ask if they could strip it for you.
You could try stripping it yourself with a seam ripper, assuming it's sewn on. A lot of jersey collectors do this themselves.
However you end up getting it off, take it to Great Plains for the re-customization. They do the Flames jerseys, so it's always spot-on.
I have a brand new vintage jersey that is a blank canvas. I would love to have Bennett put on it, but we still don't know what number he is going to go with long term.
I also have a Baertschi jersey and seeing how it's completely useless I may actually attempt to take the numbers off myself...if it goes well I will report back! Namebar is easy - I just took my Cammalleri namebar off without any issues and plan to get it replaced with Gaudreau.

A "vintage" one probably has the Stanley Cup badge on it, and I always find it strange when modern-day players are sewn onto a jersey from an era that they never played in. I have a vintage and got MacInnis put on it because the player and jersey style are from the same era.
On the flip side, putting a #9 McDonald on current jersey just looks weird. I have seen this era-blending at the dome before.
Obviously, you can put whoever you want on it regardless of what some random guy on an internet forum says.

I never really got the relettering thing. Your Jersey is a snapshot of a point in time, not meant to be a constantly changing billboard for the current roster.
I've got a Cammalleri #13 retro 3rd and would never re-name bar it to Johnny G.

You are totally right and I just worded my post wrong. It's a "new" retro jersey, not vintage. I don't know why I called it vintage in my original post.

Normally I would agree with you. But Sven is gone to the enemy...it just feels weird.
Removing the numbers, you will create garbage...I guarantee it.
Even if you get the number 4 off in an attempt to change it to a 1 and make Bouma. The name will appear off centre as the number 1 won't centre up the same way the 4 did.
It will cost about $50-$60 once you get the number 4 on the back and sleeves removed, not worth it.

I'd keep Baertschi on it, hope for a hall of fame career, and sell it as a rookie jersey later when people don't care about the drama in his early years.
However, if you could remove the numbers without damaging them, you could have 75% of a Russell and Brodie customization kit only requiring the name bars.

This man speaks the truth, they usually refuse to do it. Butchers the jersey and nothing looks right anymore.. you end up with a cheap ebay knock off looking thing.
Cut your loses now and get a new one, I myself picked a blank retro up off of Mac_82 on the board here with hopes of getting Bennett put on when we know his real number next year.
Though reading this thread I was almost convinced just to put 63 on there and just roll with it

another thing to remember when trying to remove a number off of a jersey.... the twill (that's the material the number is made of) has a heat activated adhesive on the back side. the numbers are usually heat pressed into place and then stitched on to the jersey (many places like great plains will have the top two layers stitched to the third layer so they only need to stitch the outer layer to the jersey)
pics of front/back of twill....
Spoiler!
cream twill - white adhesive very obvious on the back
brown twill...
black twill...
when the twill is heat pressed the glue transfers to the jersey - so if you peel a number off there will be residue. many times, the colour of the twill will also transfer to a jersey
as others have said - it's not really worth it
i would recommend changing the name bar... from the flames webpage
