Default Time to bulk up on the Sriracha

Sriracha, the life-giving hot sauce with the comforting rooster on the bottle. That judge ordered the company that makes Sriracha hot sauce to shut down its Irwindale processing plant, which local residents say produced fumes that burned their eyes and throats.

I have 3 of their big bottles at home from when I read they may close down a couple months ago.
I do use the sauce on almost everything, but I'm not one to think it is the best ever. The flavour isn't my ideal, but the consistency is. I hate runny watery hot sauce.

So I saw Sriracha sauce at Costco in a slightly different bottle. Just the logo was different. Instead of the trademark white rooster silhouette it had a colored, stylized, rooster/phoenix sort of creature on it. Is this the real stuff?

Anyone else tried the Organic knockoff version sold at Costco? It isn't quite the same, but nevertheless it's still a tasty sauce. It tastes a bit sweeter and a bit more garlicky:

That's the one! Guess that answers my question.

I wouldn't think they'd be able to use the name 'Sriracha'.

mmmmm I love my Sriracha. I put it on everything too and don't even get any mouth burn anymore. Tastes like tangy ketchup.

That's just the name of the type of sauce. Trademarking that would be like trademarking Tequilla or Mustard.

See I wasn't sure on that, though I had thought about it. As I had never seen another Sriracha brand before. Or knew about a Sriracha plant from which the spicy goodness was extracted.

I was kinda 60-40 on it.

If you use sriracha as an ingredient while cooking, try sambal oelek which is a paste made from chilies. It's used a lot in Indonesia and Malaysia and readily available in most grocery stores in small jars. A little goes a long way so it's not a condiment but if you use it for cooking instead of sriracha, your reserves will last you a little longer.

^^^ I tried that, it was alright. Dunno, didn't like it on a sub as much as say Vietnamese noodles. As well, it's not pure Sriracha, but a toned down blend. Was still pretty spicy though.

Actually, it was the Sriracha Steak and Cheese, not the Chicken Melt shown there.

I love Sambal as well. This is another good one. Basically Sambal with garlic:
