Set things up as a treasure hunt in the house. Write little notes with clues to help her find the next note/clue, until it leads her to the gift you're giving her (I presume you've got her a gift, since you said something she can open). Then the day of, text her the first clue, to start the hunt. Make the notes cute, if that's something that she likes/appreciates.
My husband was away one Valentines Day, and the Saturday before (Valentines was on Monday), he picked up the gift and some balloons and with my daughter's help (she was about 10 at the time), hid them in our daughter's closet and then Monday morning, all 3 of the kids brought me the gift, card and balloons. It was very sweet.

My suggestion would be to not get too carried away with the actual date and just do something with her the day you get back- less busy that way anyways.
Depending on how long you have been together, you may need leave to leave a small gift or something, but just plan dinner etc for the day you return. I think newer relationships require doing something unique and special, but married couples either do nothing or something simple like going out for dinner etc...

The thing is I never do anything romantic or remotley romantic. We've been together for 8years and I can see her frustration with that, so i'm willing to try to set something up. But I will be doing something when I return also.

If you never do anything romatic then you doing it before you go on the road is going to raise suspicions.
"Why is he doing this now when he's leaving? OMG he's a serial killer"

Does she liked stuffed animals? The only reason I ask, is to get an idea of how 'all out' you want to go with this. It's a bit sappy but if she's got a favorite song, you can go to Build-A-Bear and make her a little bear/stuffed animal and they have these doohickies that you can buy, bring home, and record/download? the song onto, then zip into the critter and when she presses it, it plays the song. Could be one of the little things along the way, holding a note in the treasure hunt, to lead her to the next clue....
Just an idea.

Take pictures of yourself, print them, and leaf them around the house.
She opens the freezer and BAM! There you are! She opens the cutlery drawer and BAM! There you are. She goes for her underwear drawer and BAM! There you are! She lifts the toilet seat and DAMN! There you are!
Each picture is different and equals the topic of the place you put it.

Captain's previous good advice:
What is love? What is this longing in our hearts for togetherness? Is it not the sweetest flower? Does not this flower of love have the fragrant aroma of fine, fine diamonds? Does not the wind love the dirt? Is not love not unlike the unlikely not it is unlikened to? Are you with someone tonight? Do not question your love. Take your lover by the hand. Release the power within yourself. Your heard me, release the power. Tame the wild cosmos with a whisper. Conquer heaven with one intimate caress. That's right don't be shy. Whip out everything you got and do it in the butt. By Leon Phelps

Listening time? You sure you want to imply that you actually listening to her is a special occasion?
