This class I was in last semester had a final exam that was 55% of our total grade. During the exam an attendance sheet was signed. Upon checking my grades I noticed an incomplete, therefore not receiving any credits for this course. Currently, I am in my last semester graduating in April, with the course marked Incomplete needed to graduate. (University)
I emailed the prof and received a response saying that they did not receive my final exam.
Planning to stalk that Prof's office today but not sure what else I can do. Having to re-take the exam would be rough since I no longer have any of my notes (but would do it to get a damn mark)

If true, this story is pretty unreal. I'd expect a re-write at the least. Stalk, and continue stalking, call the Dean's office. Load every single weapon in your proverbial arsenal in case the professor doesn't want to own up to his mistake.

That happened to me once. It was a take-home exam and I turned it in, and the prof lost it. He wouldn't take a copy because he said I could have just made it up after, so I got one of my roommates who (luckily) was the Dean's daughter to go talk to him with me and let him know that I handed in my exam at the same time she did. After screaming at me, he apologized a few days later and he gave me a B+ which was my grade going into the exam.
Maybe get someone who sat near you to also say you were there? Might help?

What kind of exam was it?
A similar thing happened to me in one of my electives - I filled in one wrong bubble for my uni ID. The prof basically accused me of being a lying #$%@! etc etc and that he had heard all of the stories etc etc. He did end up finding it and I got it graded.
If it was an auto-graded exam something simple like a missed bubble could do it.
There is a reason they have the sign in sheet. If your name is on there then it is the University's fault.

This happened to me with many papers that were a huge chunk of the mark. More often than not it was the TA's who marked multiple sections, who placed it in the wrong pile and upon review of the piles, it was found. Find out if it got placed in another course's pile, or another section of the same course. Just throw out various ideas to the prof, and especially indicate your situation with needing that course to graduate. More often than not, when you speak to the prof on an individual basis, they do have sympathy for these things, especially if you come across as ambitious (ie: say you're looking to get an MBA and you need the mark).

A buddy of mine in 1st semester, 1st year engineering had to write his exam in the overflow room (surname started with "W") with only 15-20 other people. Grades come back and he's failed the final exam; happens all the time in engineering, but he goes to talk to the prof and orders a copy of his final exam. Upon getting the copy he realizes he's missing the last two questions of the exam, he never received them on test day! Two questions doesn't sound like a lot, but it was easily 25-30% of the entire exam the way 1st year engineering exams go. Anyway in the end they called him a liar and never let him re-write; they even came up with some stat that 2% of all 1st year students try the same stunt.
Looking back definitely be nice, but be prepared for the worst and don't be afraid to take the issue to the top.
Go speak with an academic counselor and explain the situation and get them to begin documenting this. Find an ombudsman and explain the situation to him. Then set up a meeting with the dean of the college, the professor and yourself. Make sure you have a proposed solution to their mistake. Explain the implications of their carelessness and how it could affect the next year of your life (time/stress/money)
Professors often have a big ego and are not willing to accept that they have made a mistake, but if show them that your not going to back down they usually will. In the end, your professor will come up with some deal and try to make it seem like he's doing you a big favor, even though he f'ed up.

That doesn't surprise me. Every exam I took in College had a front page that said how many questions there were and how many pages you should have. If you were missing any, you were supposed to let the teacher know.
When I proctor an exam I have to get the students to sign in at the start, and then I have to sign them off as they hand in their exam thereby putting all the responsibility on me. But since your school only chooses to use one signing, the responsibility should still be on the prof if you signed in at first. Keep fighting this.
There is no option other than to fight this. The alternative is a huge waste of time and money for the OP. Not to mention the difficulties of finding a new grad position after the big initial hiring that occurs around may.
