I liked Sit Happens for classes, because there is (or at least there was) flexibility to work with the trainer that you find is best suited to you and your dog. But that again will just give you a basic overview. If you want more intensive training, you need to work with a trainer one-on-one, IMO.
Also, check out the Canine Good Neighbour Test. Even if you don't want to go through the actual test, it gives you an outline of what to work on.
