In my late teens, early 20's, my mom started making a recipe called Toffee Tarts - it's a shortbread base made in mini-tart tins, then filled with melted Mackintosh's toffee and whipping cream mixed together. Those things are absolutely divine and I love them so much. When I moved away from Manitoba, I started making them myself - they are a bit time consuming, but so worth it. That was my first contribution to the annual Christmas Cookie exchange I do with girlfriends here in Calgary, and I think that secured my spot in the exchange for a LONG time.
Oh and here's a great easy recipe that I brought and was a hit at last year's cookie exchange:
Oreo Truffles
1 bag Oreo Cookies
1 brick cream cheese
dark chocolate for melting
Pulverize oreo cookies in food processor until crumbs - add in cream cheese and beat until well mixed. Toss into fridge to cool and stiffen. Form into 1 inch diameter balls, place back into fridge. Melt chocolate in a double boiler or microwave, then roll balls in the chocolate. Serve. So yummy. These can be frozen very easily and they are a huge hit!
