Fresh Duck in Calgary
I am pretty new to Calgary, having move over from the UK earlier in the year, and i am wondering if there are any butchers shops in town that sell fresh duck breast. I have seen some whole frozen ducks in a few supermarkets, but i would prefer fresh.

I'll tell you what.
If I have a really good hunt next week, I'll give you some goose and duck.
It might have buckshot in it, but it will be fresh and "free-est" of the free range.

You could contact any of the nearby hutterite colonies I think most raise ducks.

Based on the smell and behaviour, my neighbor may be in the duckmeat market. That said though, it could be anything, they still havent found that cat, and the dead skunk on the street did disappear stunningly quickly.....

Should be able to get it any place in Chinatown, or at any T&T Supermarket.
There's one in Harvest Hills, one in Pacific Place Mall, and maybe one more somewhere?

Plenty to choose from in Chinatown, you can even see them preparing it in the windows. They probably have the best, if TnT Supermarket doesn't.

Asian grocery store in the mini mall on 16th and Centre has it.
About 3 blocks south of 16 along centre on the west side there is a BBq Pork place, they sell duck - pre cooked but very good prices.

very greasy - tastes like how I imagine rubber coated in cooking oil would taste like IMO

I've never been the biggest duck fan....always way too fatty and rich to have a sizable portion of. Then again, I prefer white mean, which is fairl dry to begin with.

A properly cooked duck breast is very tender, and the layer of fat on the outside is seared to crisp it up. Very nice IMO.
I know that if you ask at Sunterra Market, they usually can special order rabbit. Duck should be the same, I think.

Ducks have very fatty skin because fat is buoyant and ducks need to float!
I also have never eaten duck, but I do watch a lot of Food Network. When cooking something like a duck breast many cooks will often deeply score the fatty part of the breast in a cross-hatch pattern and render the fat down in a hot pan, then finish the cooking in the oven.
It seems like the kind of meat that if not cooked properly you probably wouldn't enjoy it and it may turn you off from having it again. That being said I'm sure properly prepared and cooked duck is extremely delicious and I want to try it some day soon.
