For your first question, yes. If I hear a song I can play it back, generally in any key you want (though the software transposes as well).
For your second question, that video series is currently under construction. I am re-tooling the course a bit to add stuff and generally improve it. It won't be available for the next little while but once it is finished it should be stellar.
