I know this works with an iPod, never tried it with an iPhone. But you open iTunes and open the preferences window, and that freezes iTunes, you can then plug in your iPod and treat it like a USB drive and explore it in Windows Explorer.
Again, don't know if that works with an iPhone.

It won't let me because they are apparently "too long". I'm not sure exactly how big they are memory wise, but they range from 45 minutes to 90 minutes long each. I've been recording the audio from a bunch of presentations.

This will sound super cheesy, but why not buy a short 1/8" to 1/8" cable and run the headphone out to the line in on the computer and dub the voice notes?
I guess it depends how desperate you are, but that is one way that would work.

That should let you use it for storing data. I have it but have never tried it, but others have said it works.
As for getting music on there from 2 different computers, that's not something Apple allows with the iPhone for some dumb reason, but there are apparently work arounds.. I've never tried it though, so no idea if this actually works.

I've used Airsharing but it doesn't give you access to the phones files. It gives you a place where you can put files. The best part of it is if you put mp3 or mp4 files on it, they will play.

Are you talking about voice memos from the Voice Memo app? If you are, then look in your iTunes music library. Mine sync over into my iTunes - though it may have been a setting I had to configure in the sync preferences.
Edit: ...annnnnnd just read the bit about not wanting to sync to the new laptop.

Photon's link has some info on how to enable use of your iPhone as an external disk.

- iPod: Setup as hard drive
- Connect iPod to computer and open iTunes

- Click checkbox “Enable disk use”
- Close iTunes

These instructions aren't 100% clear to some people from reading the comments. After Step 1, be sure to select your iPhone under DEVICES on the left side of the iTunes window. Then you should see the Preferences > iPod tab and make your changes.
The phone should then be visible as a drive letter in Explorer, just like any USB drive. Should be easy to find the audio files for your recorded memos.

Thanks to everyone for the replies.
After alot of searching I found this program - iphone explorer - and it works great for getting any of your files off the phone via the USB cable, for free and without need to jailbreak the phone. I guess the hex editing approach still remains as the only option to actually sync your phone to two computers though.
