Default UFA Grid?
Any chance we can change the UFA grid to a similar model as the RFA one? It would be nice to have a few options to sign guys besides the standard 3 year 1W deal

Nope. That's what seperates UFAs from RFAs - the decision to sign a UFA should be hard one with consequences if you mis-judge.

Noob Question. Can I submit an UFA offer to one of my yet to be UFA's now, or do I have to wait?

You have to wait until re-rates are done, then you are given a chance to sign your UFA's before they hit the open market.
