You can really see it in the UK version of Kitchen Nightmares, and even in the US version when Fox isn't trying to overdramatize it. He really does want to help out these people, give them an idea of how to be successful and truely change them. Unfortunately a lot of these people blame him for the restraunt's failing when he leaves, even though it's them that returns to their initial ways.
